材料 Ingredients (十六隻蝦餃 16 dumplings)
蝦餃皮材料 Wrapper:
八十克澄麵粉 80g wheat starch
八十克生粉 80g potato starch
一百七十毫升滾水 170ml hot water
一茶匙菜油 1tsp vegetable oil

蝦餃餡材料 Filling:
一百八十克蝦肉,切大粒 180g prawn, diced
三十克冬筍,切絲 30g winter bamboo shoot, sliced
三十克肥豬肉,切丁粒 30g pork fat, diced

調味料 Condiments:
四分三茶匙鹽 3/4tsp salt
四分一茶匙糖 1/4tsp sugar
四分一茶匙胡椒粉 1/4tsp ground pepper
半茶匙紹興酒 1/2tsp Shaoxing wine
一湯匙蛋白 1tbsp egg white
一茶匙菜油 1tsp vegetable oil
半茶匙麻油 1/2tsp sesame oil
一茶匙半生粉 1.5tsp potato starch
