Palak Corn Subzi
The Palak Corn Subzi is a mellow preparation of nutrient-rich spinach and sweet corn. These two star ingredients complement each other well not just in flavour and texture, but in looks too. The corn kernels look like shiny pearls laid on bright green silk, kindling one's appetite both through the aroma and the visual appeal.
Preparation time: 15 minutes. Cooking time: 4 minutes. Serves: 3.
¾ cup spinach (palak) purée
½ cup blanched and chopped spinach (palak)
1 cup boiled sweet corn kernels (makai ke dane)
½ tbsp ghee
½ tsp cumin seeds (jeera)
2 tsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1 tsp grated ginger (adrak)
Salt to taste
2 tbsp fresh cream
¼ tsp garam masala
½ tsp chilli powder
For serving
Rotis/ parathas/ bajra roti
1. Heat the ghee in a non-stick kadhai and add the cumin seeds.
2. When the seeds crackle, add the garlic, green chillies and ginger and sauté on a medium flame for 1 minute.
3. Add the spinach purée, spinach, corn, salt, ¼ cup of water, fresh cream, garam masala and chilli powder, mix well and medium flame for 2 to 3 minutes.
Serve hot with hot Rotis or parathas or bajra roti.
