Ingredients for chicken marination:
Chicken 1 kg
Yogurt 1/4 cup
Oil 3 tbsp
Lemon juice 2 tbsp
Salt to taste
Red chili powder 1/2 tsp
Red chili flakes 1/2 tsp
Garam masala powder 1/2 tsp
Coriander powder 1 tsp
Cumin powder 1 tsp
Green chili paste 1 tbsp
Ginger garlic paste 1 tbsp
Turmeric powder 1/2 tsp
Ingredients for masala:
Oil 1/2 cup
Onion (sliced) 1 cup
Cinnamon stick 2 (1 inch)
Cloves 7
Black peppercorns 10-15
Green cardamoms 3
Bay leaf 1
Tomatoes (sliced) 1/2 cup
Green chilies 4-5
Yogurt 1/2 cup
Ingredients for rice:
Guard rice 3 cups
Oil 2 tbsp
Salt to taste
Vinegar 1 ½ tbsp
Cumin seeds 1/2 tbsp
Cinnamon stick 1 (1 inch)
Black cardamom 1
Green cardamom 2
Bay leaves 2
Star anise 1
Water as required
Ingredients for layering:
Food color (orange) 1 tsp
Rice (boiled)
Chicken masala
Fried onion (as required)
Coriander fresh (as required)
Mint fresh (as required)
Food color few drops
Tomato slices (as required)
Lemon slices (as required)
Nutmeg a pinch
Mace a pinch
Directions:
In a bowl mix chicken, yogurt, salt, chili powder, chili flakes, turmeric powder, garam masala, cumin powder, coriander powder, green chili paste, ginger garlic paste lemon juice and oil. Marinate the chicken for 30 minutes. Set aside.
Now add 3 cups of Guard rice in a bowl and soak them for 25 minutes.
In a pot of simmering water add salt, curry leaves, cumin seeds, cinnamon stick, green cardamom, black cardamom, star anise, vinegar, and oil. Add soaked rice into it and cook until 80% done. Stain out and set aside.
In another pot, heat oil add onion and cook until onion start to get light golden brown.
Now add cinnamon stick, black peppercorns, cloves, curry leaves, and tomatoes. Cook for 2-3 minutes. Then add water as required and cook again until tomatoes are properly cooked for 4 to 5 minutes.
Now, add green chilies and give it a good mix. Add yogurt and cook minutes on medium flame for 3 to 4 or until oil separates.
At this point add marinated chicken, cover and cook for 10 to 15 minutes on medium low flame or until chicken is done. Add water if required. Your masala chicken is ready.
Now, in another pot spread a layer of masala chicken, boiled rice, masala chicken again and rice again.
Add food color, garnish with mace powder, nutmeg powder, coriander, mint, tomato slices, lemon slices, fried onion, and water.
Cover with lid and let it simmer for 10-15 minutes on low flame.
Your chicken masala biryani is ready, Serve hot.
