材料/Ingredients:
一隻三斤重的鴨子 1 duck (1.8kg)
六粒酸梅(一百三十五克)6 pickled plum (135g)
片糖一片,冰糖一塊,共一百三十五克 1 slab of brown sugar, 1 piece of rock sugar (135g)
一茶匙半雞粉1.5tsp chicken powder
五湯匙(約七十五毫升)老抽 5tbsp/75ml dark soy sauce
一茶匙胡椒碎 1tsp ground black pepper
兩條肉桂條 2 cinnamon sticks
三粒八角 3 star anise
六粒紅蔥頭 6 shallots
六粒蒜頭 6 cloves of garlic
三片拍鬆了的薑片 3 slices of ginger
適量橘子皮 orange peel
兩茶匙幼鹽 2tsp table salt
一湯匙玫瑰露酒 1tbsp Chinese rose wine/rice wine
