材料 Ingredients
雞1.5公斤 Chicken 1.5kg
浸煮隻雞: Cooking liquor for chicken:
25g薑 25g ginger
25克紅蔥頭 25g shallots
白滷水湯: Brine:
五克八角 5g star anise
五克芫荽籽 5g coriander seeds
五克小茴香 5g cumin seeds
五克肉桂 5g cinnamon
五片香葉 5 bay leaves
20克厚切薑片 20g ginger thick slices
40克乾蔥頭 40g shallots
60克鹽 60g salt
兩克黑胡椒粒 2g black peppercorn
1.5公升水 1.5L water
250毫升雞湯 250ml chicken stock
紹興酒50克 50ml Shaoxing wine
麻油 Sesame oil
香料袋 x 1 Muslin bag/foodgrade pouch
預先準備冰塊(用1公升水做的) Prepare 1L worth of ice
