[Chocolate Mousse]
Sweet chocolate：40g
Fresh cream35%（soft peak） ：200g
Milk：150g
Pure cocoa powder：10g
Granulated sugar：25g
Gelatin leaves：5g
[Instructions]
1. Chop the chocolate
2. Whip the fresh cream until soft peaks
3. Soak gelatin leaves in cold water
4. Add cocoa powder and granulated sugar in a pan, mix, heat and melt milk gradually.
5. Once it boils, add gelatin and dissolve
6. Filter 5 into 1 and mix well
7. Cool 6 to 40 °C, combine with fresh cream, and cool and solidify in the refrigerator for 3 hours or more


[Chocolate Cream]
Couverture chocolate：50g
Fresh cream：80ml + 80ml
[Instructions]
1. Chop the chocolate
2. Boil 80ml of fresh cream
3. Put 2 in 1 and emulsify
3. Add an additional 80ml of fresh cream into 2 and mix, chill and whip over ice water

[Salty dog]
