夏天,新鲜玉米上市了,除了烧烤玉米之外呢,新鲜玉米还有很多吃法。用新鲜的玉米粒烤玉米饼实在是太美味了,完全保留了它天然的香甜。做法和烤蛋糕非常类似,但是用到了酵母。
你一定会问:“这个配方能不能用泡打粉代替?”
可以的,但是它的效果不如酵母好。
在两个小时的发酵过程中,酵母在发酵,干的玉米粉在吸收水分,慢慢变软。最主要的是面筋在形成。玉米粒用到了很多,它里面很多水分,实际是比较沉的,面筋结构起到了支撑的作用,所以比用泡打粉直接烤的方法会更松软一些。
材料:
中筋面粉 150克 1杯
玉米粉(粗)90克 1/2 杯
糖 25克 2 大勺
酵母 3克 1 小勺
鸡蛋 2个 110克
水 185克 3/4 杯
油 50克 1/4 杯
玉米粒 250克 (两个玉米棒)
ingredients:
all purpose flour 150g 1 cup
cornmeal 90g 1/2 cup
sugar 25g 2 tablespoons
yeast 3g 1 teaspoon
egg 2 110g
water 185g 3/4 cup
oil 50g 1/4 cup
fresh corn 250g (from two cobs)
