The wagyu of the sea. Bluefin tuna is a delicacy unlike any other, and there’s a good reason single fish have sold for north of 3 million dollars. They’re fantastic. Similar to a cow, they have various different cuts of meat, all of which are very different in terms of their colors, textures, flavors, and perhaps most notably, fat content. Today, we got an 132 pound tuna and turned it into a sushi roll. And I was joined by my amazing, kind friend @Guga Foods.

One additional note. I’m a huge advocate for the environment and this includes sustainable fishing practices. Bluefin tuna in particular have a sad history of overfishing from certain foreign fleets. This tuna came from South Africa and, to my knowledge, was sustainably harvested given each country has a certain quota. With that said, I’m constantly thinking about that balance between respecting the environment and providing content you can love and learn from, so I thought it was important to be transparent.
