These French Diamond cookies | Sable Diamant Cookies are rich with buttery flavor, crisp on the outside, crumble, delicate and melt in your mouth on the inside.
很好吃的法式钻石饼干。它有浓郁的牛油香,酥脆美味,入口即化,口感和味道可以跟某知名品牌的奶油酥饼一较高下,有兴趣的朋友不妨试一试。
钻石饼干之所以有钻石两个字是因为饼干外围裹着一层糖,晶莹闪亮,外形耀眼,像极了钻石,故得其名。

Ingredients 材料:

1)Unsalted butter 无盐牛油 – 200g
2)Fleur de sel 盐之花 – 1/2 tsp
3)Sugar 糖 – 50g
4)Icing sugar 糖粉– 50g
Divide the cookies batter into 4 equal portions and add in the following ingredients accordingly to make different flavor diamond cookies.
把拌好的面糊分成4等份后,分别加入以下材料做成不同口味的法式钻石饼干。

a. Original 原味:Bread flour 高筋面粉– 15g;Cake flour 低筋面粉– 60g

b. Matcha White Chocolate 抹茶白巧克力口味:Bread flour 高筋面粉 – 15g;Cake flour 低筋面粉 – 57g;Matcha powder 抹茶粉– 3g;White Chocolate Chips 白巧克力豆 – 25g

c. Earl Grey tea 伯爵茶:Bread flour高筋面粉 – 15g;Cake flour 低筋面粉– 58g;Earl Grey tea 伯爵茶叶 – 2g

d. Chocolate Almond 巧克力杏仁口味:Bread flour 高筋面粉– 15g;Cake flour低筋面粉 – 48g;Cocoa powder 可可粉 – 10g;Chopped almond 杏仁碎– 25g

*Yield 48 cookies in total, 12 cookies for each flavor.
*每种口味可做12片,总共做了48片饼干。

*Baking time is for reference only. The diamond cookies should be crisp on the outside, crumbly and melt in your mouth on the inside。 If the cookies is slightly soft or not crumbly, that means they are underbaked. You can return the cookies into oven, bake at low temperature, 300°F/150°C for another 5-10 mins.
*烘烤的时间仅供参考。烤好的饼干是酥化松脆。若是饼干内部吃起来偏软或不酥松,那是饼干还没烤到熟透,可以放回烤箱,调到低温300°F/150°C,烤多5-10分钟。
