中秋节快到了,推荐你做班兰椰蓉冰皮月饼。做法直接,是个免烤箱食谱。食谱分量要拿捏得准,可以作出外皮口感软糯又不粘牙,馅料稳固的冰皮月饼。今天用了新鲜班兰叶制作成天然绿。揉面到位,冷冻后冰皮切开稳固,纹路清晰,撕开还有拉丝效果。内馅也采用了细椰丝和椰奶油,口感细腻且香醇,清新班兰和椰香味。
冰皮月饼像其名一样是个冰皮,所以没有烤过,全程用蒸淀粉的方式制作。作好建议放冰库冷冻最好保持原来软糯度。糯米粉帮助口感软糯;粘米粉帮助顺滑不粘牙;澄粉帮助晶莹通透, 所以一个不可少。

收藏方式:做好收密封容器,放冰库冷冻2小时后立刻吃口感最佳。要保存更久,收冰库冷冻,吃前解冻保持柔糯度。

Mid-Autumn Festival is around the corner. Recommend you to make Pandan Coconut Snowy Mooncakes. The method is straightforward, no bake recipe. With accurate ratio recipe, you can make snowy mooncakes with soft, glutinous yet non-sticky texture, and steady fillings. Today, I used fresh pandan leaves to make natural green. When snowskin is kneaded just right, can be cut steadily after freezing, clear stamp pattern, even with stringpull effect when pull apart.
The filling is cooked with desiccated coconut and coconut cream, delicate texture with fragrance, refreshing pandan and coconut flavors.
Snowy Mooncake has snow skin as its name suggests, so it’s not baked, made by steaming starch throughout the process. Thus, recommended to store in freezer to keep the original softness and glutinous. Glutinous rice flour gives soft glutinous texture; rice flour gives smoothness and non-stickiness; Wheat Starch gives crystal translucent appearance, so none is dispensable.

Storage method: Put in airtight container, freeze for 2 hours, and serve immediately for the best taste. To keep it longer, freeze in the freezer and thaw before eating to keep original softness and glutinous.

=Pandan Snow Skin 班兰冰皮 (10pcs, 26g/pc)=
35g Glutinous Rice Flour 糯米粉
35g Rice Flour 粘米粉
20g Wheat Starch 澄粉
30g Icing Sugar 糖粉
1g Salt 盐
100g Pandan Juice班兰汁 (10g Pandan Leaves班兰叶 + 110 Water水)
30g Coconut Cream (Thick, room temp) 椰奶油(浓,室温)
20g Condensed Milk 炼奶
20g Corn Oil 玉米油
(After water boiled, steam on medium-high heat for 15 minutes) (水沸腾后,中大火蒸15分钟)

=Coconut Fillings 椰蓉馅 (10pcs, 26g/pc)=
10g Wheat Starch 澄粉
56g Caster Sugar 细纱糖
1g Salt 盐
95g Coconut Cream (Thick, room temp) 椰奶油(浓,室温)
1 Large Egg 大鸡蛋
48g Desiccated Coconut 细椰丝
32g Unsalted Butter (Melted, Cooled) 无盐牛油 (融化,放凉)
(Medium Low Heat, Total Stir-Fried fillings for 9 minutes) (中小火,全程炒馅9分钟)

(Once mooncakes are done, freeze in the freezer for 2 hours) (月饼作好,冰库冷冻2小时)
