炮(páo)肉是云南一道比较传统的菜,家家户户办酒席必不可少,也称为压桌菜!以普洱墨江的较为有名,它还有一个特别好听的名字,肉心水酥!炮肉和酥肉的制作流程类似,只是用料略有不同,酥肉大多用淀粉,而炮肉用的是豌豆粉,用油炸至金黄可以直接当菜来食用,也可加新鲜菜叶煮成汤!在我印象中,肉心水酥一直是村里流水席上最受欢迎的一道菜
