𝗩𝗔𝗗𝗔 𝗣𝗔𝗩 𝗣𝗔𝗔𝗞𝗦𝗛𝗔𝗟𝗔

Ingredients:
𝗙𝗼𝗿 𝗚𝗿𝗲𝗲𝗻 𝗖𝗵𝗶𝗹𝗹𝗶 𝗚𝗮𝗿𝗹𝗶𝗰 𝗣𝗮𝘀𝘁𝗲
2-3 Green chillies, हरी मिर्च
5-6 Garlic cloves, लहसुन
Salt to taste, नमक स्वादअनुसार
𝗙𝗼𝗿 𝗕𝗮𝘁𝗮𝘁𝗮 𝗩𝗮𝗱𝗮
1 tbsp Oil, तेल
1 tsp small Mustard seeds, बारीक राई
1 sprig Curry leaves, करी पत्ते
Green Chilli Garlic paste
1 tsp Turmeric powder, हल्दी पाउडर
¼ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Little water
4-5 Potatoes, boiled & mashed,आलू
Salt to taste
2 tbsp Coriander leaves, chopped, धनिया पत्ता
Oil for frying
𝗙𝗼𝗿 𝗕𝗮𝘁𝘁𝗲𝗿
2 cups Gram flour, बेसन
Salt to taste, नमक स्वादअनुसार
¼ tsp Baking soda, बेकिंग सोडा
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर
Water
¼ tsp Sugar
2 tsp Oil
𝗙𝗼𝗿 𝗚𝗮𝗿𝗹𝗶𝗰 𝗖𝗵𝘂𝘁𝗻𝗲𝘆
½ cup fresh Coconut, grated, ताजा नारियल
5-6 Garlic cloves, with skin, लहसुन
5-6 Dry red chillies, सूखी लाल मिर्च
A pinch of asafoetida, हींग

5-6 Green Chillies,Slit, हरी मिर्च
Oil for frying, तेल तलने के लिए
Salt to taste

Besan ka chura, तले बेसन का चुरा

𝗙𝗼𝗿 𝗕𝘂𝗿𝗴𝗲𝗿 𝗩𝗮𝗱𝗮 𝗣𝗮𝘃

Tomato, sliced
Onion, ring
Dry garlic chutney, सुखी लहसुन की चटनी
Batata vada, बटाटा वडा
Fried green chilli, तली हुए हरी मिर्च

𝗣𝗿𝗼𝗰𝗲𝘀𝘀
𝗙𝗼𝗿 𝗚𝗿𝗲𝗲𝗻 𝗖𝗵𝗶𝗹𝗹𝗶 𝗚𝗮𝗿𝗹𝗶𝗰 𝗣𝗮𝘀𝘁𝗲
In a mortar pestle, add green chilli, garlic cloves, salt to taste and make a smooth paste.
𝗙𝗼𝗿 𝗕𝗮𝘁𝗮𝘁𝗮 𝗩𝗮𝗱𝗮
Heat oil in a deep pan, add mustard seeds and let splutter.
Add curry leaves, green chilli and garlic paste and saute it well.
On medium flame, add turmeric powder, Degi red chilli powder and saute for a minute.
Add a little water and saute well. Switch off the flame, add boiled potatoes and mix.
Add coriander leaves and mix. Keep aside to cool.
Make medium size balls of potato mixture and keep aside for further use.
Heat oil in a kadai, on medium flame.
Now, dip the batata vada into the besan batter till well coated, carefully slide it into hot oil and fry them until golden brown.
Remove on absorbent paper and keep it aside for further use.
𝗙𝗼𝗿 𝗠𝗮𝗸𝗶𝗻𝗴 𝗖𝗵𝘂𝗿𝗮
Drizzle the batter into the hot oil and deep fry on medium flame until golden in color and crisp.
Remove in an absorbent paper and keep it aside for further use.
𝗙𝗼𝗿 𝗕𝗮𝘁𝘁𝗲𝗿
In a bowl, add gram flour, salt to taste, baking soda, degi red chilli powder, water as required, sugar & mix well. Rest for 10 min.
Add oil & mix it well to a smooth batter of coating consistency.
𝗙𝗼𝗿 𝗚𝗮𝗿𝗹𝗶𝗰 𝗖𝗵𝘂𝘁𝗻𝗲𝘆
In a non-stick pan, add fresh coconut, roast it on low flame until light golden in color.
Add garlic cloves with skin & dry roast it well. Add dry red chillies and roast.
Add asafoetida & mix well. Transfer it into a bowl and let it cool down.
Once it cools down, transfer it into a grinder jar and grind it coarsely.
𝗙𝗼𝗿 𝗙𝗿𝗶𝗲𝗱 𝗖𝗵𝗶𝗹𝗹𝗶
In the same hot oil fry the chillies, remove on absorbent paper.
Sprinkle some salt and mix well. Keep aside for further use.
𝗙𝗼𝗿 𝗖𝗵𝘂𝗿𝗮 𝗣𝗮𝘃
Take a pav, slice into half, apply some green chutney on both the sides of the pav.
Add a handful of fried chura with dry garlic chutney and serve hot.
𝗙𝗼𝗿 𝗖𝗹𝗮𝘀𝘀𝗶𝗰 𝗩𝗮𝗱𝗮 𝗣𝗮𝘃
Take a pav, slice into half, apply some green chutney on both the sides of the pav.
Sprinkle some dry garlic chutney, place the fried batata vada in the center with fried green chilli.
Serve hot.
𝗙𝗼𝗿 𝗖𝗵𝗲𝗲𝘀𝗲 𝗩𝗮𝗱𝗮 𝗣𝗮𝘃
Take a pav, slice into half, apply some green chutney, mayonnaise on both the sides of the pav.
Place batata vada in the center, grate the cheese on top of it along with mayonnaise.
Serve hot with fried green chilli.
𝗙𝗼𝗿 𝗦𝗰𝗵𝗲𝘇𝘄𝗮𝗻 𝗩𝗮𝗱𝗮 𝗣𝗮𝘃
Take a pav, slice into half, apply schezwan chutney on both the sides of the pav.
Place the fried green chilli and batata vada in the center and serve hot.
𝗙𝗼𝗿 𝗕𝘂𝗿𝗴𝗲𝗿 𝗩𝗮𝗱𝗮 𝗣𝗮𝘃
Take a pav, slice into half, apply mayonnaise on both the sides of the pav.
Place the sliced tomato, onion rings and sprinkle some dry garlic chutney on top.
Flatten the batata vada and place it in the center. Top it with mayonnaise and cheese slices.
Cover it with the other slice of the pav, serve hot with fried green chilli.
