面包新做法,好用的不揉膜法,像层层毛线圈,好看松软又拉丝
Wool Roll Bread
lukewarm milk 250ml 温牛奶250毫升
yeast 3g(1tsp) 酵母3克
all-purpose flour or bread flour 400g 中筋面粉或面包粉400克
white sugar 30g (2tbsp) 白糖30克
salt 3g(1/2tsp) 盐3克
whole egg 55g +- 一个鸡蛋 55克
unsalted butter 40g 无盐黄油40克
dried cranberry 50g 蔓越莓干50克
raisin 50g or other dried fruits 葡萄干50克适量
egg wash
9"pan (23cm×7cm) 9寸烤盘 (直径23厘米×高7厘米)
preheated oven 170℃/340℉ for 25 minutes , cover with aluminum foil if color changed to red
brown in 18 minutes
