Sukha Bhel
Sukha bhel, the best medicine for sudden hunger pangs, be it on a noisy railway platform or a quiet roadside! this dry, non-messy variation of bhel can be stuffed in as a quick meal even as you rush to work. You may add veggies like tomatoes etc if you wish to make it an even more enjoyable and wholesome snack.
Preparation time: 20 minutes. Cooking time: Nil. Makes 4 plates.
Ingredients
To be ground into a Sukha teekha chutney (using no water)
1 cup chopped mint leaves (phudina)
½ cup chopped coriander (dhania)
1½ tbsp roasted chana dal (daria)
1 tbsp roughly chopped green chillies
A pinch of turmeric powder (haldi)
A pinch of asafoetida (hing)
1 tsp lemon juice
Salt to taste
Other ingredients
4 cups puffed rice (kurmura)
½ cup boiled, peeled and chopped potatoes
½ cup finely chopped onions
4 tsp masala chana dal
4 tsp roasted peanuts
4 tsp roasted chana
1 tbsp finely chopped raw mangoes
1 tsp cumin seeds (jeera) powder
½ tsp chilli powder
1 tbsp lemon juice
Salt to taste
¼ cup Nylon sev
6 to 8 puris or papadis, broken into pieces
For the garnish
4 tbsp Nylon sev
4 tbsp chopped coriander (dhania)
For serving
8 puris or papadis
Method
1. Combine all the ingredients along with the sukha teekha chutney in a large bowl and toss gently till all the ingredients are mixed well.
2. Place equal portions of bhel on 4 plates and garnish each plate with 1 tbsp of sev and 1 tbsp of coriander.
Serve immediately with Papadis or puris.
