Tahini Dip
An inseparable part of lebanese cuisine, tahini basically means a paste of roasted sesame seeds. The paste is widely used to make salad dressings, dips and sauces. In the given recipe it is combined with curds which results in a unique bitter-sour product.
Preparation Time: 5 minutes
Cooking Time: 1 minutes
Makes 1 cup
Ingredients
1 cup thick fresh curds (dahi) , whisked
For The Tahini Paste
2 tbsp sesame seeds (til)
1 1/2 tbsp lemon juice
2 tbsp olive oil
1 clove garlic (lehsun)
salt to taste
For Serving
pita bread
lavash
Method
For the tahini paste
1. Roast the sesame seeds in a non-stick tava (griddle) on a medium flame for a few seconds.
2. Allow it to cool completely, transfer into a bowl and add the olive oil, lemon juice, garlic and salt.
3. Blend in a mixer to a smooth paste. Keep aside.
How to proceed
1. Combine the curds and the prepared tahini paste in a deep bowl and mix well using a whisk.
2. Refrigerate for at least 1 hour.
2. Serve chilled with pita bread or lavash.
