Spicy Mexican Pasta Bake

As good as a visit to Mexico! Try this delicious Spicy Mexican Pasta Bake, which is topped with the all-time favourite Mexican salsa sauce and loaded with cheese, which adds a smooth texture to the dish. The coriander and cumin flavoured white sauce adds more zing to this dish! Serve along with Garlic Bread and Vegetable Cutlets.

Preparation Time: 20 minutes.
Cooking Time: 6 minutes.
Serves 4.
Baking Temperature: 200°C (400° F).
Baking time: 20 minutes.

For the salsa
2 tsp oil
¼ cup chopped onions
¼ cup chopped capsicum
1 cup chopped tomatoes
1 tsp chilli powder
Salt and fresh ground black pepper (kalimirch) to taste

Other Ingredients
1 tbsp oil
¼ cup chopped onions
¼ cup chopped capsicums (red and yellow)
2 tsp cumin seeds (jeera) powder
2 tsp dry red chilli flakes
2 cups cooked penne
1½ cups white sauce
2 tbsp chopped coriander (dhania)
Salt and fresh ground black pepper (kalimirch) to taste
½ cup grated processed cheese

For the salsa
1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
2. Add the capsicum and sauté on a medium flame for 1 minute.
3. Add the tomatoes, chilli powder, salt and pepper, mix well and cook on a medium flame for 1 minute. Keep aside.

How to proceed
1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
2. Add the capsicum, cumin seeds powder and chilli flakes and sauté on a medium flame for 2 minutes.
3. Add the pasta, white sauce, coriander, salt and pepper and mix well.
4. Pour the pasta in a greased baking dish, spread the prepared salsa on top and spread it evenly.
5. Sprinkle cheese on top and bake in a pre-heated oven at 200°C (400°F) for 15 minutes.
Serve hot.
