GIANT BANANA PUPCAKE WITH CAROB BANANA FROSTING - RECIPE

2/3 cup mashed ripe bananas
½ cup softened butter
¾ cup water
2 cups whole-wheat flour
3 large eggs
2 tsp baking powder
1 tsp baking soda
1 tsp dried ginger
2 tsp cinnamon
½ cup chopped pecans

Directions:
1. Preheat oven to 350deg f/180d c
2. Whisk flour, baking powder, baking soda, ginger and cinnamon together in a medium Bowl. Set aside.
3. Cream bananas and butter till smooth with electric mixer
4. Add water and eggs one at a time
5. Stir in dry ingredients into the banana mixture
6. Stir in chopped pecans
7. Spoon mixture evenly into giant pupcake molds
8. Bake for 30 - 35 mins
9. Cool on cake cooling rack

Mix all together in a bowl until well combined.
Cool completely before decorating with Carob Banana Frosting.
