Ingredients for sponge fingers（手指饼）:
3 large eggs - grade A （鸡蛋）
60g caster sugar （细砂糖）
80g plain flour（普通面粉）
10g corn flour （玉米粉）

Filling（芝士馅）:
250g Mascarpone cheese （马士卡邦芝士）
2 egg yolks （蛋黄）
50g caster sugar （细砂糖）
2 tsp gelatine powder（鱼胶粉）
40ml water（水）
200g whipping cream （动物性鲜奶油）
1 tbsp Rum, optional （兰姆酒，随意）

Coffee syrup (咖啡糖浆）：
150ml black coffee （黑咖啡）
2 tbsp coffee liqueur （咖啡酒）
1 tbsp rum （兰姆酒）
