I think that simple food made with minimal ingredients is sometimes tastier. This toast sandwich uses plenty of cabbage. The odd combination of sugar, ketchup and mayonnaise works subtly well in this sandwich. It goes perfect as brunch or light meals.

Ingredients
2 slices white bread
1 cup shredded cabbage
1/3 shredded carrot
2 slices of ham
3 large eggs
2~3 tablespoons butter
1/3 teaspoon salt
1/4 ground black pepper
Brown sugar, ketchup, mayonnaise

Instructions
1. Thinly slice the cabbage or shred it with mandolin. Thinly julienne the carrot. Cut the ham in half and thinly slice. Combine the ingredients in a bowl and mix.
2. Add salt and pepper to the bowl. Add the eggs and toss well using chopstick or fork. set aside.
3. Heat one tablespoon of butter in the pan. When butter is melted, place the cabbage mixture and flatten it down. As the mixture starts to hold its shape, form into a shape of the bread. Carefully flip and continue on the opposite side.
4. Transfer the cabbage pieces to toast. Sprinkle sugar and add ketchup and mayonnaise. Cut the sandwich in half.
5. Serve it warm.
