Rajasthani Mutton Banjara (Banjara Gosht )
Ingredients for boiling Mutton:
Mutton 1½ kg
Water 2L
Salt 1 ½ tsp
Turmeric powder ¼ tsp
Ingredients for Curry:
Oil 1 cup
Bay leaves 2-3
Black peppercorns 1 tsp
Cloves ½ tsp
Cinnamon stick 1 inch
Red Chilies (dried) 4-5
Onion paste 1½ cup
Ginger garlic paste 2 tbsp
Boiled Mutton
Yogurt ¼ cup
Turmeric powder ½ tsp
Red chili powder ½ tbsp
Coriander powder 1 tbsp
Mutton stock 2 cups
Coriander (crushed) ½ tbsp
Directions:
1. Bring water to a boil in a pot. Add mutton pieces, salt and turmeric and boil until tender.
2. Now, heat oil in another pot. Add bay leaves, peppercorns, cloves, cinnamon and red chilies and sizzle for a minute.
3. Add onion paste and cook 3-4 minutes over medium flame. Add ginger garlic paste and cook for another 2 minutes.
4. Add boiled mutton and yogurts. Mix well and cover with lid until the water from the yogurt has evaporated.
5. Take off the lid and mix well. Add red chili powder, turmeric powder, and coriander powder and cook for 2-3 minutes over medium-low flame
6. Add mutton stock and let cook until the curry thickens. Lastly, add crushed coriander and mix well. Cover with lid and cook over medium-low flame for 3-4 minutes.
7. Your Banjara Gosht is ready. Serve with naan and enjoy.
