[Ingredients]（approx 8 pieces）
■Mont blanc canele
Granulated sugar：50g
Whole eggs：1個
Cake flour：50g
Cacao Powder：5g
Milk：250ml
Chestnut paste：50g
Sweet chocolate：20g
Candied Chestnut：Moderate amount（Cut 1 / 16th in a canele）
Salad oil：Moderate amount

1. Cut the candied chestnuts in 16 and 8 parts
2. Melt chocolate and mix with chestnut paste
3. Add granulated sugar to the whole egg and mix well.
4. Sift the flour and mix gently.
5. Add milk to 4 little by little (preferably use a strainer here)
6. Put 5 in a pan and cook from medium-to-low heat until it thickens
7. Turn off the fire, take a portion of 6 and take the chestnut paste, then put it all together and mix well
8. Apply salad oil to the silicone mold and add the dough
9. Add about 4 slices of candied marron in the middle of the dough
10.Bake in preheated oven 180 ° C for 30 minutes


■Marron cream（Mont Blanc cream）
Chestnut paste：150g
Unsalted butter：15g
Heavy cream：10g
Syrup：6g
Rum：3g

1. Mix paste and butter well until whitish
2. Add heavy cream
3. Sugar 2: 1 water to make syrup
4. Add rum

Finished with whipped fresh cream, squeezed over canele, wrapped with Mont Blanc cream, add spearmint and sprinkled with icing sugar.
