We’re in Selangor, Malaysia to film a meal which is pretty special! Beggar’s Chicken is a dish that originates from China and New Heong Kee has been serving up their mud packed chicken for over 40 years.

A kampung chicken is first marinated in soy, sesame oil and Shao Xing rice wine before being stuffed with a range of Chinese herbs including goji berries, dong gui and red dates. It’s then wrapped in layers of papers before being tied with string. To the side of the restaurant is a large mound of laterite earth which is churned in a machine with water to create a malleable mud. The chicken is packed with the mud before being placed in a hot ash oven with charcoals and baked for 8 hours.

The results are spectacular. The chicken is perfectly cooked, the meat falling off the bone. The herbs add an almost medicinal, herbal flavour to the chicken and the juices it’s cooked in are savoury and perfect for pouring over white rice.

New Heong Kee also serves a number of other dishes ranging from winter melon soup to oyster rice. In addition to our Beggar’s Chicken we eat a country fish and local vegetables cooked in sambal belacan.
