▼材料 Ingredients

無鹽牛油 Unsalted Butter 30g
砂糖 Sugar 30g
黑巧克力70% Dark chocolate 70% 65g
鮮奶 Milk 50ml
蛋黃 Egg Yolk 2
無糖可可粉 cocoa powder 15g
低筋麵粉 Cake Flour 20g

蛋白 Egg White 2
檸檬汁 Lemon Juice 0.5ml
砂糖 Sugar 30g
鹽 Salt little

馬斯卡彭 Mascarpone 40g
淡忌廉(淡奶油) Whipping Cream 100ml
咖啡 Espresso 40ml
吉利丁片 Gelatine leaves 2.5g
砂糖 Sugar 30g

淡忌廉(淡奶油) Whipping Cream 160ml
砂糖 Sugar 15g

無糖可可粉 cocoa powder

▼步驟 Instructions

1. 巧克力、牛油、糖,隔水加熱溶化,加入鮮奶、蛋黃
2. 加入已過篩可可粉、麵粉,攪拌均勻
3. 蛋白中加入檸檬汁、鹽,分次加入砂糖,打至軟性發泡
4. 蛋白分次加入蛋黃糊拌勻,倒入模具
5. 170°C / 338°F,35mins,出爐後將中間按壓成凹形,放涼
6. 砂糖、已泡軟吉利丁加入咖啡,淡忌廉打至軟性發泡後,分次加入咖啡液體,加入馬斯卡彭打發至均勻, 倒入凹蛋糕中間,冷藏2小時以上
7. 最後,打發淡忌廉,抹在蛋糕上
