RECIPE

▼材料 Ingredients

雞蛋 Egg 2 (~110g)
蛋黃 Egg yolk 1 (~20g)
蜜糖 Honey 5g
砂糖 Sugar 65g
低筋麵粉 Cake flour 70g
無鹽牛油 Unsalted butter 18g
牛奶 Milk 25ml


▼步驟 Instructions

1. 過篩麵粉,水浴加熱牛油牛奶至60°C
2. 雞蛋、蛋黃、蜜糖、砂糖,水浴加熱至40°C
3. 打發後,篩入麵粉,攪拌約30下
4. 在牛油加入一小部份的麵糊後再倒入,攪拌約30下
5. 150°C 30-35 分鐘
