我用了三种主料:牛骨、牛筋、牛肉,牛骨精炼高汤,牛肉孕育美味,牛筋主打口感。牛筋可不容易煮软,高压锅伺候是必须的,您喜欢筋道的口感就炖35分钟,喜欢软嫩的口感就炖45分钟,不过炖软不是难点,加什么调料,何时加才是关键。
