Pulled Chipotle Pot Roast Recipe - Glen And Friends Cooking
Ingredients:
oil
1 Kg boneless beef chuck / bottom round roast
2 onions, chopped
3-5 garlic cloves, minced
1-127 mL can green chillies (Hatch)
1-796 mL can diced tomatoes
30 mL (2 Tbsp) vinegar
2-3 chopped chipotle peppers in adobo sauce
2 mL (½ tsp) cumin
2 mL (½ tsp) paprika
Salt and pepper to taste
2 mL (½ tsp) ground cinnamon
5 mL (1 tsp) cocoa powder
2 bay leaves
30 mL (2 Tbsp) Marmite
Method:
Preheat oven to 160ºC (325ºF).
In a Dutch oven heat oil over medium-high heat, and brown roast on all sides.
Remove roast, and add onion and garlic to the pot; cook and stir until translucent.
Stir in tomatoes, vinegar, chipotle, cumin, paprika, salt, pepper, cinnamon, cocoa, bay leaves and Marmite.
Bring to a boil.
Place roast back in pot, cover and place in the oven for 3-5 hours.
Check once or twice and add liquid if needed.
Shred beef with two forks.
